Pour the coconut oil and eggs into the bottom of a Kitchenaid bowl or mixing bowl.
Process over medium speed until incorporated, about 1 minute.
Add the carrots, then process until combined.
Add gluten free flour, 1 cup at a time, until incorporated.
Fold the blueberries into the batter.
Lightly flour a large marble cutting board or over ample surface area to roll and cut the dog treats.
Use a rolling pin to roll the batter til it's approximately ¼-thick.
Use the dog bone cookie cutter to form the dog treats. Note: Since this recipe makes 35 to 40 medium-sized treats, you might want to wrap and freeze half of the batter for later use.
Place the formed dog treats onto a large greased cookie sheet.
Bake for 20 minutes. Then, cool completely and serve to your fur kid.
Store the cooled dog treats in an air-tight container or plastic bag.
