Cut pomegranate in half, and remove arils from flesh.
Place arils and remaining ingredients in blender or food processor. ( Reserve several arils for garnishes, if desired.
Pulse for about 45 seconds, or until well-combined.
Pour syrup in a saucepan. Heat to boiling, then simmer for 15 minutes.
Place cheesecloth or a chemical-free white paper towel over a colander. Set the colander on top of a large glass bowl.
Strain the pomegranate mint syrup into the bowl.
Pour half of the mixture and half of the club soda into a large punch bowl. Garnish with reserved arils or fresh mint leaves.
This party punch goes flat when the syrup and club soda are left together in cold storage.
