Deglaze pan with the 1/3 cup chicken broth. Let reduce by half. Put chicken back in skillet.
Combine all remaining ingredients - except for fresh cilantro - in a medium bowl.
Pour over browned chicken. Cook over medium heat for 10 minutes.
Add fresh cilantro. Cook for an additional 5 minutes.
Serve with mashed potatoes, rice, or gluten free pasta.
If you really like cilantro and are going to use two tablespoons, try cooking one tablespoon into the sauce and using the tablespoon of fresh cilantro as a garnish. The layered cooked/fresh flavor is another awesome flavor combo of this dish that you can use to shake the recipe up a bit.
