When the trinity is browned, add the minced garlic and cook for 1 additional minute, stirring constantly.
Stir the remaining ingredients into the skillet, ensuring that all of the spices and browned veggies are fully incorporated into the tomato sauce.
Cover, and bake for 1 hour.
Remove from oven. Leave covered and unattended for 1 hour.
Uncover and stir. Taste, and add additional salt, black pepper and cayenne pepper, if desired.
A deep cast iron skillet filled with all the required ingredients for this recipe is heavy, y'all. So, please, please do not attempt to make this unless you are strong enough to put the heavy skillet in the oven, and then confidently take it out later. It's easiest to slide the skillet into the oven uncovered, then very carefully cover it before baking. Also, its best to uncover the skillet once baked, and very, very carefully remove the heavy skillet to your stove top before recovering it for the resting period. Please be extra careful, y'all!!
