It's a More Substantial Version of the Classic Recipe...

French onion chicken bake incorporates all of the flavors of the French onion soup recipe into a more substantial main dish that generally feeds four people. The saucy caramelized onions on the bottom of the baking dish are topped with browned floured chicken breasts and cheese, then baked until golden brown bliss. The dish is usually served over potatoes or rice for a hearty, complete meal.

My twist on the recipe includes adding sliced green bell peppers and celery ribs to the sliced yellow onions base. I also pound the chicken breasts for optimal tenderness and coat them with traditional South Louisiana seasonings before use. 

And of Course I Bring the Flavors All-the-Way Down to The Bayou, Y'all...

These two steps inject a bit of Cajun flavor and texture into the French onion chicken, making it more suitable for my palate. I also finish the dish with smoked Gruyere cheese, which I believe contrasts perfectly with the sweet flavor of the onions and the savory flavor of the smoked cheese and seasoned chicken meat. 

All in all, the flavors of this French onion chicken recipe are surprisingly sophisticated, y'all! And, each bite is full of complex twists and turns that make it truly something special to enjoy. For sure!!

French Onion Chicken Bake Ingredient Essentials & Substitutions

  • I used pre-sliced chicken cutlets for this French onion chicken bake recipe out of sheer convenience. I love that you can pick them up at the grocery store and use them immediately since they are all already sliced into an even thickness. You can also cut whole boneless skinless chicken breasts in half vertically before use, if that's what you have.
  • Substitute pepper Jack cheese for the smoked Gruyere cheese if necessary. Your prepared French onion chicken won't have the same smoky flavor, but will still be very tasty.
  • Collectively, the blend of chicken broth and beef broth injects the dish with the traditional French onion flavor. You can also use a can of French onion soup if you don't have both types of broth on hand. 

How to Make French Onion Chicken Bake

To start the recipe, preheat the oven. Then, pound the chicken breast cutlets with a meat mallet, and sprinkle the dried Cajun seasonings over them. (You only need to pound and season one side.)

Pour the all-purpose flour into the bottom of a shallow dish. Press one side of a chicken breast piece into the flour, then flip it over and press the other side into the flour. Repeat the process with all four breast cutlets.

Transfer the floured chicken breast pieces one by one to a plate.

Pour some of the olive oil and the butter into a large, oven-safe skillet over medium-high heat. Add two of the floured breast cutlets at a time to the pan, and cook until just browned.

When all of the breast cutlets are lightly browned, transfer them to a plate topped with paper towels.

Deglaze the pan with a small amount of chicken broth. Then, add the remaining oil and butter to the skillet.

Now, brown the chopped onion, bell pepper, and celery in the pan drippings in the skillet.

When browned, add the minced garlic and cook for one additional minute before removing the skillet from the heat.

Pour the chicken broth and the beef broth into the pan, and top with the browned chicken breast cutlets.

Finally, top each chicken breast cutlet with cheese and slide the skillet into the oven. Bake until the cheese melts and the chicken pieces are golden brown.

Ingredients

For the Seasoned Chicken

  • 4 chicken breast cutlets or chicken breast halves
  • salt, black pepper, and cayenne pepper to taste I use about ยฝ teaspoon salt, ยผ teaspoon black pepper, and โ…› teaspoon cayenne
  • 1 tablespoon dried parsley flakes
  • ยฝ teaspoon paprika

For the French Onion Chicken Bake

  • ยฝ cup all-purpose flour I use this one
  • 2 tablespoons butter
  • 2 tablespoons oil I love this brand
  • โ…“ cup chicken broth
  • 4 cups sliced yellow onions about 3 large onions
  • 1 cup sliced green bell peppers about 1 large bell pepper
  • 1 cup sliced celery ribs about 1 large celery rib trimmed and chopped
  • 1 tablespoon minced garlic about 4 medium-sized cloves
  • ยฝ cup chicken broth
  • ยฝ cup beef broth
  • 1 cup smoked Gruyere cheese or pepper Jack cheese

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Pound the chicken breast cutlets or halves with a meat mallet.
  • Sprinkle each piece with salt, black pepper, cayenne, dried parsley flakes, and paprika.
  • Pour the all-purpose flour into a long, shallow dish.
  • Press one chicken breast cutlet into the flour, then turn over and repeat on the other side. Transfer the floured chicken breast cutlet onto a plate, then flour both sides of the remaining three cutlets.
  • Heat a large cast iron skillet or other type of oven-safe skillet over medium-high heat.
  • Add about half of the oil and the butter to the pan.
  • Working in batches of two, brown both sides of the seasoned and floured chicken breast cutlets, then transfer to a paper towel topped plate. (The cutlets won't be cooked up to safe eating temperature just yet, just lightly browned enough to be used in the final step of the recipe,)
  • Deglaze the pan with โ…“ cup chicken broth, using a wooden cooking spoon to pick up the brown bits on the bottom of the skillet. Discard any overly browned or black bits.
  • Add the remaining oil and butter to the pan, then top with the sliced yellow onions, green bell peppers, and celery ribs.
  • Cook for approximately 10 to 15 minutes, stirring often, or until the vegetables are browned.
  • Stir the minced garlic into the vegetable mixture and cook for one more minute.
  • Remove the skillet from the heat.
  • Pour the chicken and beef broth into the skillet, and stir until combined with the browned vegetables and garlic.
  • Top the mixture with the browned chicken cutlets.
  • Sprinkle the smoked Gruyere cheese over each chicken piece evenly.
  • Transfer the skillet to the oven and bake for about 15 minutes, or until an instant-read thermometer inserted into the thickest part of the breast reads at least 165 degrees Fahrenheit.
  • Turn on the broiler.
  • Broil the French onion chicken bake for about 2 minutes, or until its nicely browned on top.
  • Remove from the oven and let sit for 5 minutes before serving.

Notes

Keep more oil or butter close to hand in case you need a bit extra throughout the chicken and veggie browning process. 
Store the leftover French onion chicken bake in an airtight container in the refrigerator for up to 3 days.
