For the Homemade Cajun Butter
- 1 cup salted butter, softened 2 sticks
- 1 tablespoon minced garlic

- 2 teaspoons hot sauce
- 2 teaspoons honey
- 1 teaspoon onion powder
- ยฝ teaspoon paprika

- โ teaspoon celery seed
For the Baked Rainbow Trout
- 1 pound rainbow trout fillets
- salt, black pepper, and cayenne pepper to taste I used about ยผ teaspoon salt, โ teaspoon black pepper, and โ teaspoon cayenne
- ยฝ teaspoon dried dill weed or 2 teaspoons fresh dill
- 2 tablespoons lemon juice, freshly squeezed
- ยฝ teaspoon lemon zest
Instructions
- Preheat the oven to 400 degrees F.
- Combine all of the Cajun butter ingredients in a bowl.
- Grease a large cast iron skillet or ovenproof baking dish generously with olive oil.
- Place the trout fillets into the dish.
- Season the fillets with the salt, black pepper, cayenne, dill, lemon juice, and lemon zest.
- Slide the baking dish into the oven and bake for 7 minutes.
- Use heavy oven mitts to remove the dish from the oven.
- Place about 1 tablespoon of the homemade Cajun butter over each fillet.
- Transfer the baking dish back into the oven and cook for an additional 7 minutes, or until an instant-read thermometer inserted into the thickest part of the fillets reads at least 145 degrees F.
