To start the recipe, preheat the oven.

Grease a cast iron skillet or ovenproof baking sheet generously with high-heat olive oil. Place the fillets skin-side down in the pan.

Then, season them with the SP&C, dill, lemon juice, and lemon zest. 

Slide the skillet into the oven.

For the Homemade Cajun Butter

For the Baked Rainbow Trout

  • 1 pound rainbow trout fillets
  • salt, black pepper, and cayenne pepper to taste I used about ยผ teaspoon salt, โ…› teaspoon black pepper, and โ…› teaspoon cayenne
  • ยฝ teaspoon dried dill weed or 2 teaspoons fresh dill
  • 2 tablespoons lemon juice, freshly squeezed
  • ยฝ teaspoon lemon zest

Instructions

  • Preheat the oven to 400 degrees F.
  • Combine all of the Cajun butter ingredients in a bowl.
  • Grease a large cast iron skillet or ovenproof baking dish generously with olive oil.
  • Place the trout fillets into the dish.
  • Season the fillets with the salt, black pepper, cayenne, dill, lemon juice, and lemon zest.
  • Slide the baking dish into the oven and bake for 7 minutes.
  • Use heavy oven mitts to remove the dish from the oven.
  • Place about 1 tablespoon of the homemade Cajun butter over each fillet.
  • Transfer the baking dish back into the oven and cook for an additional 7 minutes, or until an instant-read thermometer inserted into the thickest part of the fillets reads at least 145 degrees F.
