Cajun roasted potatoes are seasoned with the 'trinity' of chopped onion, celery, and green bell pepper, and tossed with a buttery, garlicky sauce featuring regional dried spices. Then, they are baked until super tender and golden brown.

Cut all of the potatoes into similar-sized pieces. This ensures that they cook evenly and are ready at the same time.

Flip the potatoes at regular intervals while baking. If you don't, some of the potatoes may stick to the bottom of the pan and burn.

This roasted Cajun potatoes recipe is highly flavorful as written. However, it is not spicy. Therefore, if you want to turn up the heat level, add your desired amount of Louisiana-style hot sauce to the buttery spice mixture.

Variation

This recipe calls for peeling the potatoes before baking them. This produces mostly soft, tender pieces that have soaked up the buttery, seasoned sauce.

You can also choose to leave the potatoes unpeeled. The skin-on potatoes will soak up the flavors of the sauce. But they won't absorb all of it, and will therefore yield a somewhat crispier variation of the Cajun roasted potatoes.

  • Fresh, large potatoes are easy to peel and chop for this recipe. I usually cut them into roughly 1-inch cubes, which I find the ideal size for the prepared dish. 
  • Chopped onion, green bell pepper, and celery form the trinity veggies that we use to season practically everything in South Louisiana. They add their distinctive flavors and textures to this Cajun roasted potatoes recipe. Therefore, I highly recommend using all three to experience this dish as intended. 
  • The garlic and dried seasonings come together to create the Cajun spice blend that makes this dish so delicious. They're easy to come by, and you can use them again and again in other locally-inspired dishes
  • The melted butter and avocado oil blend beautifully into a mouthwatering sauce that dispenses the spices throughout the roasted potatoes. You can also use high-heat olive oil or all butter if that's what you have on hand.
  • A few teaspoons of hot sauce make these roasted potatoes spicy. Otherwise, they're highly flavorful with a zesty kick on the end of each scrumptious spoonful. 

How to Make Cajun Roasted Potatoes

Preheat the oven.

Then, pour the butter, oil, garlic, and spices into the bottom of a large mixing bowl.

Add the chopped trinity veggies, then toss to combine.

Transfer the mixture to a well-greased cast iron skillet, 9 x 13 glass baking dish, or a large, aluminum foil-covered rimmed baking sheet.

Slide into the oven, and bake until done.

Ingredients

  • 4 tablespoons butter, melted
  • 2 tablespoons avocado oil or high-heat olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon paprika
  • 1 large yellow onion, chopped
  • 1 large green bell pepper, chopped
  • 3 celery ribs, trimmed of white parts and chopped
  • salt, black pepper, and cayenne pepper to taste I used about ยพ teaspoon salt, ยฝ teaspoon black pepper, and ยผ teaspoon cayenne
  • 2 ยฝ pounds potatoes, peeled and chopped into 1-inch cubes preferably russet, Yukon gold, or yellow potatoes
  • 2 teaspoons hot sauce, optional

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Pour the melted butter, avocado oil, garlic, dried parsley flakes, paprika, salt, black pepper, and cayenne into the bottom of a large mixing bowl. Stir until combined.
  • Fold the chopped onion, green bell pepper, and celery to the mixture.
  • Add the peeled, chopped potatoes to the mixture in batches, tossing to combine all of the ingredients well before proceeding with the next batch.
  • Transfer the mixture to a well-greased cast iron skillet, large baking dish, or foil-covered rimmed baking sheet.
  • Bake for 50 to 60 minutes, or until the potatoes are golden brown and tender in the middle with some crispy edges. Use a spatula to flip the potatoes and veggies every 15 to 20 minutes throughout the roasting process.

Notes

Chop all the potatoes into similar-sized cubes, about 1 inch, to ensure they cook evenly.
Make a point of flipping and stirring the potatoes at regular intervals throughout the baking process to prevent them from sticking to the pan and burning.
This recipe is ultra-flavorful as written. However, you can make it spicy by adding 2 or more teaspoons of Louisiana-style hot sauce to the buttery spice mixture.
If you want extra-crispy Cajun roasted potatoes, scrub the potatoes, but do not peel them. Then, chop them with the skins on and proceed with the recipe as written.
