They're the Easiest Biscuits You'll Ever Make, Y'all...

Butter swim biscuits are buttermilk biscuits baked in a pan filled with melted butter, hence the name. Also called butter dip biscuits or butter drowned biscuits, these types absorb the butter while baking, resulting in a rich, tender crumb.

Since you bake them in an 8 x 8 baking dish, they rise in the hot oven into bakery-style delights that are a refreshing change from the traditional buttermilk biscuit recipe. 

My gluten free version remains true to the original, using GF flour and the standard amount of butter. And, I'm happy to say that they're just as delicious as their wheat-laden cousins. In fact, they are so close to the original that I don't think that anyone would know that these were gluten free. Nope. 

So, if you're looking for the perfect simple gluten-free biscuit recipe, you've found it. You can use it for everyday meals and pull it out on special occasions to wow your loved ones with warm, delicious biscuits they'll rave about. Indeed.

Gluten Free Butter Swim Biscuits Ingredient Essentials & Substitutions

  • I used Great Value gluten-free all-purpose flour in this recipe, and I would use it again the next time I make it. That said, I'm also a Bob's Red Mill 1-to-1 baking flour fan, so I recommend that brand, too. However, this butter swim recipe is extremely forgiving, so don't hesitate to use the gluten-free flour blend you already have the first time you make it. 
  • Plain sugar is all you need to sweeten the batter lightly. You can omit it if desired, to make a sugar-free version of these gluten free butter swim biscuits. 
  • The baking powder and baking soda are the leavening agents for the biscuits. They work in unison to ensure that the biscuits rise as much as possible throughout the baking process. 
  • Buttermilk adds essential moisture to the recipe. And, it also reacts with the baking soda, creating air bubbles that lend a light, fluffy texture to each biscuit. But, don't worry, if you don't have any on hand then you can make it easily by stirring a small amount of vinegar into milk or half and half. 
  • This easy gluten free biscuits recipe includes a whole stick of melted butter. While this amount of butter might sound alarming, it's not. The butter bakes right into the biscuit dough as it cooks, making each one a melt-in-your-mouth tender biscuit masterpiece that you'll want to experience again and again. I use salted butter. But, you can use unsalted butter and add a pinch of salt, if desired. 

How to Make Gluten Free Butter Swim Biscuits

To start the recipe, preheat the oven.

Then, whisk all of the dry ingredients together in a bowl.

Now, pour the buttermilk into the mixture.

Then, stir until combined. Do not over-stir though, because instead of ending up with a tender crumb you may end up with hard, tough biscuits. Instead, stir until the mixture is just combined.

Next, pour the melted butter into the bottom of a baking dish

Then, position the dough on top of the butter. You can use a wooden spoon, serving spoon, or even your hands to accomplish this. It's tricky because the dough is so sticky. But, you can complete the task swiftly if you don't overthink it.

Use a butter knife to cut the biscuit dough into 9 pieces. Try to make the pieces equal if you can. But, it's okay if they are a little off. The gluten free butter swim biscuits will still turn out just fine.

Finally, bake until the biscuits are cooked through and golden brown on top.

For the Wet Ingredients

  • 2 cups buttermilk or make your own, see notes
  • 8 tablespoons salted butter, melted 1 stick

Instructions

  • Preheat the oven to 450 degrees Fahrenheit.
  • Pour the dry ingredients into a large mixing bowl, then whisk to combine.
  • Add the buttermilk to the mixture, then stir until just combined. (Do not overwork the dough or the biscuits will come out hard).
  • Pour the melted butter into the bottom of a 8 x 8 baking dish.
  • Position the dough over the butter. You may need to use a large spoon or spatula and your hands to accomplish this. The dough is sticky, and it may be easier to work with it in batches.
  • Use a butter knife to cut the dough into 9 pieces. Try to get them as equal as you can but don't worry if some of them are a bit smaller than the other squares.
  • Slide the dish into the oven and bake for 20 to 25 minutes, or until the top has browned and a toothpick inserted into the biscuits comes back clean.
  • Remove the dish from the oven and let the rest of the butter be absorbed into the gluten free butter swim biscuits before you cut and serve them.

Notes

You can make your own buttermilk for this recipe easily. Just add 2 tablespoons of white or apple cider vinegar to 2 cups milk or half and half. Stir and let sit for at least 15 minutes before using.
Store the leftover biscuits in an airtight container on the counter for up to 3 days. Reheat in the microwave or oven before serving. 
Add ยผ teaspoon of salt to the batter if you use unsalted butter.
