My fresh and hot out of the oven spicy Cajun chicken dip has the kind of flavors and textures that you food-feel all the way down to your toes, y'all. A cream cheese, cream of chicken soup and hot sauce base, blended till well-combined. Then topped with cheese, roasted red pepper bits, south Louisiana seasonings and pulled chicken before baking to creamy, dreamy bliss in less than 30 minutes. Yep and yay...

It's the Food Calm Before the Holiday Cooking Fest Storm, Y'all...

As I write this, it's just days before the Thanksgiving lunch that I'm hosting this year. I'm making three of my favorite things, gumbo, turkey and remoulade slaw

Others are bringing sides and gluten free desserts. And my Mom is making her famous lemonade for the occasion, as well.

I'm super excited about our families being here for the holiday meal. And already mentally preparing the execution of the dishes that I'm making. And of course, the cleaning, organizing and decorating, which is strangely really fun for me this time of year. 

Anyway, I wanted to take a day amongst my planning to NOT cook anything that would take up too much of my time. To give me a food calm break before the holiday cooking fest storm so I could relax and get my head together.

So I Baked Something Quick, Easy and Delicious...

I had a rotisserie chicken in the fridge. And of course, numerous cheeses handy. So, I peeked my head into my pantry to see what I had to pull it all together. And once my eyes fell upon the can of gluten free cream of chicken soup, I knew that I was down to make a low-effort dish in which my oven would do most of the work.

I was definitely in an appetizer kind of mood, so I whipped up this Cajun chicken dip just going on the flavor hunches that I had in my head. I wanted this easy gluten free dip to be spicy, so the high flavor levels are reminiscent of a buffalo chicken dip. However, there's no ranch, blue cheese or sour cream in this, so it really holds its own in terms of a new flavor profile.

This spicy Cajun chicken dip has only 10 ingredients in addition to the crackers or chips for serving. There's barely any, if at all cutting involved. And you can definitely make it ahead to heat up right before your event. It's really an impressive dish for very little effort. And it keeps well in the fridge and reheats to perfection, too. 

How to Make Spicy Cajun Chicken Dip

Start the spicy Cajun chicken dip by preheating the oven. Then, pour the softened, cubed cream cheese, GF cream of chicken soup, and hot sauce into a large bowl:

Use a hand mixer to blend the ingredients until well-combined:

Then, pour the remaining spicy Cajun chicken dip ingredients into the bowl:

The chunky veggies add a lot of varied texture to the dip.

And stir by hand until the mixture looks like this:

Finally, pour the mixture into a well-greased cast iron skillet, and bake until done:

The first things that you notice about this spicy Cajun chicken dip are its feisty, hot sauce-injected essence and its super creamy consistency. Then, once you get a few pieces of the tender, spice-studded chicken on your tongue, you're literally counting all of the individual flavor bombs that are going off in your mouth.

By the time you've had a few dip-topped cracker bites behind you, you're loving the prominent spicy hot sauce pops on your tongue just as much as you're relishing in the cool, creamy finish. 

This sassy dip really lives up to its name, y'all. It's fiery hot and temperature hot, which makes it just as perfect for a pre-holiday cooking snack as it is for a day-of-the-event tastebud teaser. Indeed.

  • Preheat the oven to 350 degrees F.
  • Chop the softened cream cheese into cubes.
  • Pour the cream cheese cubes, gluten free cream of chicken soup, and hot sauce into the bottom of a large glass bowl.
  • Blend with a hand mixer on medium-low speed until well-combined, about 1 minute.
  • Add all of the remaining ingredients, except for the crackers and/or chips, to the mixture.
  • Stir the mixture by hand until all of the ingredients are well-incorporated.
  • Pour the mixture into a well-greased 10-inch cast iron skillet.
  • Bake for 25 to 30 minutes, or until browned and bubbly.
  • Serve with gluten free crackers or chips.

Notes

I used rotisserie chicken in this recipe, that is why it does not call for salt, black pepper or cayenne pepper. If you use bland pulled chicken, you'll definitely want to season the pieces before adding them to the other dip ingredients. 
I'm also 100% sure that the store-bought rotisserie chicken was gluten free. So, if you use one like I do, ask the grocery store employees if any wheat or gluten-based ingredients are used in the preparation of the birds before your purchase. 
If you are not gluten free, you can make this recipe easily with your favorite canned cream of chicken soup and crackers or chips.
