  • Freshly caught salmon skin-on fillets are usually the best option for this Cajun honey butter salmon recipe. However, you can also use high-quality thawed, frozen salmon. I used three larger, roughly 5.5-ounce fillets because that's what I had on hand. But you can also use four 4-ounce fillets with great success. 
  • Use local honey if you can. However, the dish will still turn out tasty if you have to use whatever type of honey you have on hand. 
  • Salted or unsalted butter both work well in this recipe. Adjust the amount of table salt you add to the homemade Cajun seasoning blend depending on the type you use. 
  • Lemon zest enhances the dried spices and honey-butter sauce ingredients, making them more vibrant in the prepared dish. If you only have lemon juice on hand, add it to the sauce mixture, not the Cajun seasoning blend. 
  • Avocado oil or high-heat olive oil adds a lushness to the body of the sauce that adds to its restaurant-quality tastes and textures. But, you can use all butter, if necessary, and still pull off a successful Cajun honey butter salmon. 
  • Louisiana-style hot sauce puts the finishing South Louisiana signature flavors on this Cajun salmon recipe. I used Tabasco, but Crystal and Louisiana hot sauce are also great options. 

How to Make Cajun Honey Butter Salmon

Preheat the oven.

Then, stir all the Cajun honey butter sauce ingredients in a small bowl until combined.

Ingredients

For the Honey Butter Sauce

  • 1 tablespoon avocado oil or high-heat olive oil
  • 2 tablespoons melted butter
  • 1 tablespoon honey
  • 1 tablespoon hot sauce

For the Cajun Salmon

  • 1 pound salmon fillets 3 to 4 fillets of roughly the same size, skin-on preferred
  • 2 teaspoons dried parsley flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ยฝ teaspoon paprika
  • 1 teaspoon lemon zest
  • salt, black pepper, and cayenne pepper to taste I used about ยพ teaspoon salt, ยฝ teaspoon black pepper, and ยผ teaspoon cayenne
  • fresh parsley for garnish, optional

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Pour the oil, butter, honey, and hot sauce into a bowl. Stir until combined.
  • Arrange the salmon fillets skin-side down in a lightly greased cast iron skillet, rimmed baking sheet, or 9 x 13 baking dish.
  • Pour the remaining ingredients into a small bowl, and stir until well incorporated.
  • Sprinkle this Cajun spice mixture over the top of each of the salmon fillets.
  • Pour the sauce evenly over the fillets. (Don't worry about the spillage in the pan, you can spoon it over the cooked fillets right before serving).
  • Bake for 10 to 12 minutes, or until an instant-read thermometer inserted into the thickest part of each fillet reads at least 145 degrees Fahrenheit.

Notes

For best results, choose vibrantly colored red, pink, or coral fresh salmon fillets with no smell at all. These are usually signs that they have been recently caught and are the best available.
Bake the Cajun honey butter salmon uncovered. This results in firmer, crispier fillets and a slightly thickened sauce that coats each piece beautifully. 
This recipe features a 10-minute bake time that results in fillets that are completely cooked through to about 145 degrees F. Cook the dish for less time if you want medium-rare fillets of about 125 degrees F, or medium ones of 130 degrees. 
It's very important to let the oven heat up to the full 400 degrees F before sliding the baking dish or skillet into the oven. This ensures that the cook is even, with all of the fillets temping at the same temperatures when removed from the oven. 
I recommend using skin-on fillets for this recipe. Baking each piece skin-side down creates a non-stick barrier between the fish and the pan. This ensures that the fish stays moist while cooking and does not stick to the pan once removed. 
This dish serves three to four people, depending on how many side dishes you serve alongside it. You can cut three large fillets to feed four people, if necessary.
