Fish

Many fish recipes, like my Cajun Baked Catfish, Pan Seared Snapper, and Louisiana Redfish en Papillote, are easy to whip up on a weeknight and make a stellar impression on your weekend dinner guests.

Other recipes, such as my Catfish Courtbouillon, take a bit longer to make. But, they're so incredibly delicious and body and soul-warming that once you try them for the first time, you'll likely want to make them again and again.
